Every now and then, you come across a co*cktail that opens your eyes to new sensory experiences. This Salt Air Margarita co*cktail Recipe is a unique twist on the classic Margarita. Topped with a delicious and light foam, this is the perfect margarita!

This is an awesome co*cktail called a Salt Air Margarita. We use sucro to create a light and airy foam. They’re absolutely and are excited to share the idea with you all!

We first tried this unique co*cktail recipe at a restaurant in Las Vegas,and I was instantly hooked! When asked what was in it,the staff members would only tell us that they used an emulsifier called Sucro.

So, we went home and did some of our own research, and found a recipe published in a Food & Wine co*cktail book(and then online!). We were so excited to find out that the recipe is extremely easy!

How To Make A Salt Air Margarita

Ingredients

  • Lime Juice
  • Tequila
  • Triple Sec
  • Sucro
  • Salt

Directions

  • Combine ice, tequila, triple sec and lime juice in a co*cktail shaker.
  • Shake well for 20 seconds.
  • Strain into a coupe or martini glass (I swear, it looks so pretty!).
  • To make the Salt Air topping, combine water, 2 ounces of lime juice, Sucro and salt in a blender. Blend on high until bubbles form.
  • Spoon mixture on top of the margarita.

Salt Air Foam

These drinks are different from a standard margarita because—just like the name suggests—they’re airy and decadent, topped with a light salty foam.

This recipe is also perfect for entertaining, as you won’t have to worry about melting ice or quickly-dissolving foam. For a party, make a large batch and serve on a tray as an arrival co*cktail.

Sucro – The Special Ingredient!

This Salt Air Margarita gets its gorgeous froth using sucro.

Sucrose ester is classified as an emulsifier but it is usually also used to improve texture, aeration, protein protection, and sugar crystallization. In modernist cuisine, sucrose ester is used to make airs and froths such as milk foams and foamy butter sauce.

Sucro makes such an awesome froth, you’ll be wanting to try it on all kinds of co*cktails!

Origin of the Salt Air Margarita

The salt air margarita came from the mind of Chef José Andrésat the Bazaar Mar at SLS Brickell.

Chef Andrés said“I love margaritas but never liked the salt on the rim – it’s too harsh! I always wanted something that wouldn’t overpower the drink, but would still let me have that amazing taste of salt with every sip.”

As for its conception, Andres continues: “One day I was sitting at the beach, thinking about how the waves hit the rocks and the sand.

It makes this foam that sits so beautifully on the ocean water. That image inspired this margarita, with a foam on top that we call salt air.”

Tips For Making This co*cktail

  • Shake your margarita mix in a shaker with ice and shake until the shaker is completely cold.
  • Serve in coupe or martini glasses.
  • serve with a slice of lime.

Ingredients

  • 1 ¼ ounces fresh lime juice
  • 1 ounce tequila
  • 1 ¼ ounce triple sec
  • Handful of ice

Salt Air topping

  • 4 ounces water
  • 2 ounces lime juice
  • 1 ½ teaspoons Sucro
  • ½ teaspoon salt

Instructions

  • Shake well for 20 seconds.

  • Strain into a coupe or martini glass
