What is Tigernut Flour?

Tigernuts are a root vegetable native to Africa and the Mediterranean region. Despite their name, they are not a nut. This root veggie is naturally Paleo, gluten free and nut free.

Tigernuts are a great source of potassium, magnesium, fiber, and iron. Although tigernuts naturally contain sugar, they are mostly nutty and not very sweet.

Tigernut flour is great for those who are following the Paleo, AIP or gluten free diets. It is great in baking and best used in combination with other gluten free flours.

Recipe Steps

Step 1

Add tigernut flour and coconut oil to a food processor or blender.

Blend on high for 1 minute. Use a spatula to scrape down the sides of the blender if needed.

Blend for another 1 minute or until mixture is smooth, creamy and spreadable.

Step 4

Lastly, store in a jar with lid.

  • First, add tigernut flour and coconut oil to a food processor.

  • Process on high for 1 minute. Then, use a rubber spatula or spoon to scrape down the sides of the food processor.

  • Then, process for another minute. Continue processing until smooth and creamy.

  • Finally, store tigernut butter in a Mason jar or jar with lid.

Notes

  • Use refined coconut oil for a neutral taste. Use unrefined coconut oil for a slight coconut flavor.
  • Continue processing until smooth and creamy.
  • I use a high powdered food processor and it took about 2 minutes total.
  • Store in a jar with lid at room temperature for up to 2 weeks in the fridge for up to a month.
  • Stir before use.
  • Due to the coconut oil, this tigernut butter will be thick when refrigerated. Thaw before using if chilled.
  • Add in a pinch of sea salt or cinnamon before blending if desired.
